Summertime in Colorado is all about soaking up the sun and enjoying all of the great outdoor activities that our state has to offer. But when you want to take a break from the heat and chill for lunch, nothing beats a fresh and delicious salad. Luckily, there are plenty of amazing salad spots here in North Metro Denver! Let’s take a look at some of our favorite places to get some greens.
Doug’s Diner – Thornton
Doug’s Diner has an amazing salad in Thornton that is one of our go-to’s! It’s called the Blue Salad and it has an amazing combination of grilled chicken, fresh blueberries, diced bacon, cucumbers, carrots and bell peppers.
It sounds like an odd combo of ingredients but it just works! The balsamic vinaigrette adds the perfect touch to this delicious salad. You can also choose the Fiesta, Colonel or D-Salad as well!
Doug’s is affordable, has good service and is easy to access on the corner of 136th and Colorado Blvd. There are also locations in Windsor, Parker, Boulder and Centennial if you happen to be in those areas!

Cava – Westminster

For a quick, but healthy, bite after the gym, Cava is a Mediterranean fave! Located just a stone’s throw from the new Planet Fitness, it’s a convenient spot for keeping up those healthy vibes after a work out.
Here, there are lots of pita and bowl options, but the traditional Greek Salad is by far their most popular. You can order it with savory lamb or chicken, or stick with a vegetarian falafel and zesty hummus add-ons.
Any way you top it, your Greek will be on point for a tangy and tasty lunch!

Mod Market – Broomfield

Mod has so many delicious options in everything from soups, bowls, pizzas, to best of all ….salads! The Savory Salmon Caesar has always been at the top of the list, but lately, they have a new Greens and Grains that is equally delicious (and vegetarian) with roasted mushrooms, multigrain, roasted beets, cucumbers and tomatoes on a bed of mixed greens.
It traditionally comes with ranch, but you can substitute any of their dressings, and the champagne vinaigrette is especially delicious if you’re not a fan of the heavier dressings .

Tazikis – Northglenn

If there’s one thing you can count on in a mediterranean restaurant it’s a delicious Greek salad. But at Tazikis, there are several options. Our favorite is The Mediterranean.
This colorful feast features roasted peppers, greek olives, garbanzo beans, and feta with a side of pita and a scrumptious greek dressing. You can also add any type of protein, like roasted salmon or chicken, if you want to make it an even heartier main meal.
And here’s a little insider tip, once you’ve had something that healthy for lunch, you would be doing yourself a disservice, if you did not splurge on a decadent little triangle of their honey baclava – so delish!

Acreage – Lafayette

Acreage Restaurant can make our list for several things the most notable being the delicious cider that comes from Stem Ciders within the restaurant, or how about that stunning view where you then sip that amazing applelicious cocktail? But they also make our list for great salads. At Acreage, they cater to the seasons with a bountiful roasted beet salad in the fall and two fresh and fruity options in the summer. Check out the Summer Salad on the menu right now with strawberries, cucumber and a watermelon radish in a lemon mint vinaigrette, or the Watermelon Panzanella with cucumber, pickled red onion and cherry tomatoes. Both are bright, light and perfect for a tasty lunch with a view!

Mad Greens – Louisville

Where to begin, the options at Mad greens are as colorful as their titles! We’re talking about you, “Don Quixote”! With each and every one, you can get just as much savory as sweet in your greens.
You can do the Edgar Allen Poe, an apple Waldorf with pear and walnuts with a port wine dressing; The Crazy Ivan, a roasted beet, pecans and goat cheese with Sherry Molasses, or a classic Cleopatra with craisins, cabbage, almonds and quinoa in a sweet herb vinaigrette, just to name a few of the options.
You can build your own mix with any of the ingredients or dressings and best of all,…you can drive-through at this location if you need to take your salad on the go!
